Garden Chicken Casserole

2 cans cream of chicken soup
1 1/2 cups mayonnaise
1/4 cup onions, chopped
2 cups celery, chopped
8 oz. can of water chestnuts, drained
4 cups chicken, cooked and diced
2 cups cooked rice
1 sleeve butter snack crackers, crushed
1/4 cup melted butter

1. In a large mixing bowl, combine the first 7 ingredients.
2. Pour into a greased 9 x 13 baking pan.
3. Sprinkle with crackers.
4. Pour butter over the top.
5. Bake at 350 degrees for 60 minutes.

Chicken and Black Bean Burritos

2 cups cooked and shredded chicken
1 can black beans (drained and rinsed)
1 15 oz can corn, drained
1/2 yellow or white onion, chopped
1 cup salsa
1 tsp garlic powder
1 box Spanish Rice
Tortillas - 8 burrito sized
Optional - 1 cup shredded cheese and/or sour cream

Cook the rice according to the package. Meanwhile, add the first 6 ingredients together in a medium saucepan and cook on medium low heat. This mixture needs to simmer for 15-20 minutes. You may choose to add rice to the burrito before putting in the chicken mixture or you may decide to serve it as a side dish. It is delicious both ways!

Easy Shrimp & Pasta 1/2 cup butter (1 stick) 1 lb. frozen, peeled, deveined shrimp, thawed 1/2 cup chicken broth 8 oz. sliced fresh mushrooms 1 Tbs. Garlic Pepper seasoning 12 oz. prepared angel hair pasta 3/4 cup grated Parmesan cheese In a medium pan, melt butter, add shrimp, broth, mushrooms, and Garlic Pepper seasoning. Heat on medium-low heat until mixture is heated through; about 10 minutes. Drain pasta; stir in shrimp and sauce mixture. Top with fresh grated cheese. Makes 6 servings.

Company coming over? Looking for something easy and quick to make? Try this delicious recipe! I recommend serving it with garlic bread. :)

Loaded Spaghetti Bake

12 oz. spaghetti noodles
1 lb. hamburger (I used Italian Sausage instead)
1 cup chopped onion
1 cup chopped green pepper
1 jar (26 oz) spaghetti sauce
1 can (4 oz) mushroom stems and pieces, drained
2 cups shredded cheddar cheese, divided
1 can cream of chicken soup
1 carton (10 oz) refridgerated Alfredo sauce
1/4 cup grated Parmesan cheese
1/2 cup cornflake crumbs

  • Cook spaghetti according to package directions. In a large skillet, cook the meat, onion, and green pepper over medium heat until meat is no longer pink; drain. Add the spaghetti sauce and mushrooms. Drain spaghetti; add to skillet.
  • Transfer to a greased 9 x 13 baking dish. Sprinkle with 1 cup cheddar cheese. In a small bowl, combine the soup, Alfredo sauce, and Parmesan cheese; spread over the cheddar cheese. In another bowl, combine cornflake crumbs and remaining cheddar cheese; sprinkle over the top.
  • Bake, uncovered, at 350 degrees for 30 minutes or until bubbly and cheese is melted. Let stand for 5 minutes before serving. YIELD: 8-10 servings

Taco Biscuit Bake

1 lb. ground beef
2/3 cup water
1 envelope taco seasoning
2 tubes (12 oz each) refridgerated buttermilk biscuits
1 can (15 oz) chili con carne
1 cup shredded cheddar cheese

Salsa and sour cream, optional

In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes.
Meanwhile, quarter the biscuits; place them in a greased 9 x 13 pan. Spread beef mixture over the biscuits. Next, spread the chili con carne. Sprinkle with cheese.
Bake, uncovered, at 375 degrees for 25-30 minutes or until cheese is melted and biscuits are golden brown. Serve with salsa and sour cream if desired.

I have fallen back in love with cooking. I love trying out new recipes. I have always loved baking. I have decided that whenever I find a recipe that is just too good to not share, I will post it here. I hope that you will try some of them and enjoy!

Peanut Butter Cake Bars

2/3 cup butter, softened
2/3 cup peanut butter
1 cup sugar
1 cup brown sugar, packed
4 eggs
2 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 pkg milk chocolate chips

In a large bow, cream the butter, peanut butter, sugar, and brown sugar. Add eggs, one at a time, beating well after each addtion. Beat in vanilla.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture. Stir in chocolate chips.
Spread into a greased 9 x 13 pan. Bake at 350 degrees for 45 minutes. Cool on a wire rack. Cut into bars.
